You always roll to the inside of the leg....
I start with the wrap against the leg just below the knee at an angle up. Wrap tightly not not to tightly all the way to the ankle (the last time wraping the bottom of the ankle) overlapping each revolution by about 2 inches on the front legs, less in back, and head back up. If you started your wrap at an angle you now have a little "flag" at the top, when you return to the top tuck in it to the final revolution and fasten the elastic.

There are alot of different ways to put them on wrong but their are also a few different ways to put them on right as long as you're following certain guidelines. I like to start my wrap halfway down the cannon bone and then head on down toward the ankle and then back up, ending my wrap right below the knee.
The MOST important thing to remember when using polo wraps is wrapping in the right direction, toward the rear of your horse. The reason you HAVE to wrap toward the back is because you want the wrap pressure to be put on the front of cannon bone and not the important tendons on the other side. (I'm sure you've heard of polo wraps causing bowed tendons and other tendon issues if used incorrectly...the incorrect use is usually wrapping the wrong direction)
Another thing to remember is to wrap to RIGHT below the bulb of the ankle up to RIGHT below the knee. As Palogal said, don't wrap too tight but don't wrap too loose, and you want to make sure the wrap is evenly distributed along the leg and not big on the top or big on the bottom. It takes practice, practice, practice!
I look forward to the Wrap Lesson post you're gonna make All4Grace, I'm sure it will prove to be very helpful to alot of people. It's a question I've seen time and time again.
Here is a pic of the way I wrap...man he's standing super weird, lol.
