Made a batch of pickled chicken gizzards last week and tried them this weekend. Really good!!!!!!!!!
Pickled Gizzard Recipe
1. Two lbs gizzards (and/or hearts)
Boil or pressure cook until done (tender)
2. Mix together and bring to a boil
1 cup water
1 cup white vinegar
¾ cup sugar
1 teaspoon salt
¼ teaspoon pepper
1 tablespoon pickling spice
A glove or two of garlic (to your taste)
Could also add some hot sauce or other favorite spice.
3. Layer cooked gizzards and a sliced medium onion into a canning jar. Pour the liquid mixture into the jar an seal with a canning lid. Let stand for a least a week in the refrigerator to season before eating.

OK, I like chicken gizzards, but not sure I would like them pickled! I prefered deep fried!
I do like pickled eggs, beets, and sausage! yum!!:)

lol, Ohh Rod....:eek: Last time it was BBQ goat and this time it's pickled gizzard. I don't know if I even know what a gizzard is? I don't think I want to know!

You sure have some interesting recipes!! Especially, since I am vegetarian and that picture of the skinned goat on the BBQ caught me by surprise last time! lol
Interesting. I hope you don't mind if I pass. Now anyone have any good recipes for Muscovy duck? I'm looking for those. We have 8 to eat this winter and I think it would get boring to have them the same way every time.

Ok, Now memorys of Grandma cooking chicken and turkey are flooding back to my brain. What are giblets? I remember he saying something about the butcher better have put the giblits back inside the turkey? What the heck is a giblet and why does she need it in a turkey?

Giblets are the gizzard, heart and liver.

I have also eaten muskrat, beavertail, possum, porkupine and coon.
Ok, I know what a heart and liver is, but what is a gizzard? I know I have eaten them before, but I have never known exactly what they are other than something from inside the bird.

Poultry have them. The food goes from the crop to the gizzard. There are rocks in it and the muscles of the gizzard grinds up the grains before it goes to the stomac and intestines.

I've had fried gizzards before... Papa loves them and I always wanted to grow up and be just like Papa... but really not my cup of tea. Hint: they don't taste like chicken. ;)
As a general rule, I don't eat anything that's been pickled unless it's a pickle. :p
