I am having a Christmas party saturday for about 12 people and am wanting to have fondue. I have found a few cheese fondue recipes that sounds pretty good but alot of them have wine and brandy and stuff lol, which I know will cook out and just be flavor. Does anyone have any good fondue recipes? And what would you do as far as food to dip into the fondue? So far I have: French Bread, Broccoli, Chicken, Ham and Potatoes. I think I need one or two more maybe cucumber or??
And for the Chocolate fondue I have: Strawberries, Banana, Raspberries, Mandarins and Shortcake.

I've never done cheese! When I was in college we did hot oil fondue.... usually with meats... steak bites, chicken bites, and cut up sausages. We didn't have stoves in our room, so the fondue pot, found at a garage sale, was the closest thing we had to cooking!

So hot oil as in just like cooking/veggie oil?

I think we used corn or vegetable oil.... this site says peanut oil is good. Hot Oil Fondue - Bourguignonne (http://www.gofondue.com/recipe_oil_basic.htm)
And the dips are good... ranch, teriyaki, horseradish, mustard... - cold as you can serve them, because the meat bites come out of the fondue very hot, need to cool 'em off.
Smaller meat bites, only a minute or two to cook (or less). Not very long or they get pretty tough!

OOooh... fondue is the best!! It's tradition that we do it every year at Christmas.
If you want I can email my dad's wife for all her recipes (we just go there and they do it all now), but I know she does add wine of some sort to the cheese fondue. We also do the hot oil fondue like WB mentioned. They really get into it and do about 6 different kinds of stuff to cook in the oil. Usually beef, venison, chicken, and a fish, but then they maranaide them all in different stuff. Usually 2 or three different varieties of chicken. Italian, lemon pepper, and last year they did some sort of basil marinade too.
As for her cheese fondue, they usually have bread, broccoli, califlower, fresh mushrooms (not cut up), radishes, carrots, etc. This way you can eat the raw veggies and dip in the cheese or you can first cook them in the oil fondue pot, then dip them in the cheese...
We have never actually fondued potatoes at all, but we do have baked potatoes that we eat along with it all.
Mmmm.. just writing this all out has me so excited for Christmas at my dad's.

Oh, and even though I just mentioned the marinades for the chicken (since that is my favorite) All of the meat is marinated.. no two are the same usually unless it's a favorite.

Just wondering if you have decided what you are all going to make yet! Since seeing this thread, fondue is all I can think about!

When I was younger my rents use to always have fondue parties! YUMMY stuff!!!

we do chocolate fondue a lot, with fruit and god forbid marshmallows ( my son), just use a fondue pt or double boiler and melt your fav chocolate and dip away
