This is a favorite of mine- makes about 6 servings.
Turkey meatballs/meatloaf:
Package of 99% fat free ground turkey
1 c old fashioned oats
can of chopped tomatoes
1/2 c onion(optional- will cook)
2 T garlic (can use minced in a jar)
2 T Italian seasoning
1/4 c fat free feta cheese (optional)
can of tomato sauce
salt and pepper to taste

Mix all ingredients together, except the tomato sauce. either make into balls, or put in a baking dish. bake at 350 for 30-40 minutes. Top with tomato sauce.

Chicken Burritos:
boneless skinless chicken breast (2 oz cooked)
La tortilla factory small wrap or small whole grain tortilla
fat free refried beans
low fat cheese
cumin
hot sauce (optional)
fat free sour cream (optional)

cook chicken and dice. 2 oz should be about 1/4 cup of diced chicken. Season with cumin, and salt and pepper. (try to limit salt) heat up tortilla in micro or over stove burner (no oil!!) spread 2 T of the beans on the shell. put 2 T of cheese and the chicken on it. use hot sauce to taste, and no more than 1 T of the ff sour cream.
